Xató is a seasonal salad typical of Catalonia whose ingredients are basically escarole (from here it comes to be a seasonal salad) cod, black olives and romesco sauce in some places they add canned tuna and anchovies in oil. The composition of the sauce can be found in the corresponding section.
The main ingredient of this salad is the shredded cod (in Catalan esqueixat that defines the process of shredding it and gives its name to another typical dish called "esqueixada" which is basically made up of cod prepared in this way, olive oil, onion and pepper. red, green pepper, tomato, all seasoned with olive oil and eaten as a cold salad)
